Wow that looks flavorful. I love spaghetti squash. I understand what you mean about detonating spaghetti squashes — I cooked one in my microwave and it detonated, blew the entryway open, and just missed my child in the high seat! I had jabbed the skin, however don’t think I cut it sufficiently profound. I needed to get another microwave – it was completely obliterated. So I generally cut them down the middle at this point…

Wow that looks delicious. I love spaghetti squash. I know what you mean about exploding spaghetti squashes — I cooked one in my microwave and it exploded, blew the door open, and just missed my baby in the high chair! I had poked the skin, but don’t think I stabbed it deep enough. I had to get a new microwave – it was totally destroyed. So I always cut them in half now…

I love these meatless recipes since I recently turned vegan. Instead of using oil, I just use water to saute the veggies. I also leave out the cheese. Can’t wait to try them out. Thanks again for these recipes.

I’m sad that there might be only one meal here that is not carb based. rice, quinoa, pasta, potato, tortellini…all high in carbs which I need to avoid. For those who are diabetic all carbs, not just non-wheat carbs, are an issue. My request is for lists like this to provide some other options….zuchinni noodles are the easy one, but one can spiralize other veggies. More yum, less carbs please

I love these meatless recipes since I recently turned vegan. Instead of using oil, I just use water to saute the veggies. I also leave out the cheese. Can’t wait to try them out. Thanks again for these recipes.

I’m sad that there might be only one meal here that is not carb based. rice, quinoa, pasta, potato, tortellini…all high in carbs which I need to avoid. For those who are diabetic all carbs, not just non-wheat carbs, are an issue. My request is for lists like this to provide some other options….zuchinni noodles are the easy one, but one can spiralize other veggies. More yum, less carbs please
