Easy Pizza Muffins – A quick & easy lunch or appetizer

My kids love it when I make a recipe for the first time that offers a new and exciting way to make one of their favorite foods. Pizza, of course, is the favorite of all favorites. And I can’t even argue with them, because I love pizza, too! Who doesn’t?

These pizza muffins are a super easy recipe and they are a great recipe to make with kids. We always have a great time making them together and getting creative with the toppings we will use.

Ingredients

Here are the ingredients I traditionally use, however this meal can be super versatile! You can pretty much swap things out and use any toppings you’d traditionally have on a regular pizza. Read the section below for some fun ideas!

  • 2 cups flour
  • 2 Tsp garlic salt
  • 2 Tsp onion powder
  • 1 Tsp oregano
  • 2 Tsp baking powder
  • 1/4 cup grated parmesan
  • 2 cups whole milk
  • 2 large eggs
  • 2 Tbsp salted butter melted
  • 1 package mini pepperoni divided
  • 1 cup shredded cheddar
  • 4 Tbsp pizza sauce

Additions & Substitutions

Protein: While this recipe calls for pepperoni, you could use bacon, ham, or chicken. You could use any combination of these too. Get creative! You can also make your pizza muffins vegetarian and leave out the protein all together!

Pizza Toppings: If you plan to make your pizza muffins vegetarian, I would recommend beefing them up by adding in vegetables or other common pizza toppings. Some options would be green or black olives, green peppers, mushrooms, or onions. You can also add some of these toppings in with your protein. Again, get creative and have fun with it!

Cheese: Traditionally, pizza has mozzarella cheese on it. However, for these pizza muffins you can use any type of shredded cheese. If you like spicy, try doing pepperjack! You could also use provolone, swiss, or cheddar.

How to Make Ahead & Freeze

One of the best things about this recipe is that you can make them ahead and freeze them. Then pull them out when you are ready to enjoy them.

To freeze your pizza muffins, just follow the instructions above to make them. Once they are cooled, store in an airtight freezer safe container and heat up when you are ready to eat them!

They are perfect for school lunches or after-school snacks too!
