- 3½ oz. 100 g butter, softened
- 1⁄3 cup (2½ oz.) 80 ml (70 g) erythritol
- 1 1 egg yolkegg yolks
- ½ tsp ½ tsp baking powder
- 1 tsp 1 tsp vanilla extract
- ¼ tsp ¼ tsp salt
- 1 cup (4 oz.) 240 ml (110 g) almond flour
- 1 cup (4 oz.) 240 ml (120 g) hazelnut flour
- 18 18 hazelnuts

Making low carb simple
Instructions
Instructions are for 18 servings. Please modify as needed.
Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
Mix the butter, sweetener, egg yolk, baking powder, vanilla extract, and salt in a bowl. Preferably with an electric mixer.
Add the nut flours and mix until everything is combined and moist dough forms.
Roll the dough with your hands into about 1" (2.5 cm) in diameter balls and spread them out on the baking sheet.
Flatten them a bit with your fingers and gently press down a hazelnut in the middle of each cookie.
Bake in the oven for about 15-20 minutes until golden. Let the cookies cool on the baking sheet for at least 30 minutes before removing them. Whilst hot the cookies will be really soft but will crisp up once they cool down.
Tip
Keeps fresh for at least one week in the fridge in an airtight container or for a couple of months in the freezer.

The hazelnut flour goes for 20.00 /lb and the almond flour goes for 15.00 / lb. How can people afford to spend entire grocery budget on cookies?

In Britain, almond flour and ground almonds are virtually the same but the latter is so much cheaper. Hazelnut flour I have never heard of so won't be making these. Probably far too expensive. Al sounds very American.

1 cup hazelnut flour doesn't equal 1 pound hazelnut flour or doesn't cost $20. Same goes for almond flour, 1 cup is not 1 pound. Get real. Besides, nobody is forcing you to use these ingredients and bake those cookies.

Regarding the hazelnut flour, you could just buy 110g raw bulk hazelnuts and grind them up. When you buy flours and meals already ground up and packaged, it’s of course way more expensive. But it doesn’t take much effort to grind up your own. These cookies sound delicious, and I’ll be making them. Thank you for the recipe!

Blanched or Unblanched Hazelnut flour? Also I keep running into hazelnut meal which normally would indicate some sort of gluten or other flour but ingredients state 100% hazelnut. This is confusing :)

We do not use any sweetener in our main meal recipes; only in the desserts. You may be able to find sweetener online, depending on your location.

Most commercial hazelnut flour is slightly coarser ground than almond flour.

Almond meal and almond flour are both made from ground almonds with almond flour being a finer grind.

Make the greatest rhumballs with this dough! Add rum flavour or rum, (arrak if you are swedish) maybe a little more almond flour if dough feels wet. Shape into 1” balls, dust with cocoa, refrigerate and voilá! Hey, last time I made them I put a whole toasted hazelnut in the middle. It’s like a truffle, dangerously irresistible!

Used "brown sugar Swerve" (basically erithrytol), but cut it back to less than 1/4 cup (just over 3 Tablespoons) and used dry roasted hazelnuts for the top. Very good! Not too sweet, which is a problem I have with a lot of keto dessert or baking recipes.

I didn't have the hazelnut flour but I used cashew nut flour in it's place. Had hazelnut extract though and used some of that too. The cookies were great. I've made about three batches. I'm on to the gingerbread bundit cake now. I'm making that now. The house smell fabulous. Before the keto I denied myself of sweets/desserts. I'm loving this keto diet. I leave myself just enough grams to have dessert and I get to eat it too!

Unfortunately coconut flour tends to absorb a lot more moisture than some of the other nut flours which can result in grainy or dry baked goods. I am glad that you enjoyed the other batches and that you can enjoy our baking recipes for the holidays!

The ingredients are indeed pretty expensive. But in my opinion, it's better to bake and enjoy these cookies only on special occasions like Christmas than to perpetually eat cookies and other sweets and snacks made from sugar and flour. I love this recipe. Easy to do and always a hit!

In US, shop on line for 2.2 lbs (1 kilo) of Yupik hazelnut meal, $20. At store, Adams vanilla extract 8 oz $11. Why wait for holidays, every day should be a celebration! Can I say Amazon and Walmart?

This is an easy and delicious recipe. My husband remarked that it tastes just like the Italian hazelnut cookies he had growing up. I dipped one end of the cookies in extra dark chocolate. This recipe is a keeper!!
